Have you ever tried Macadamia Nut Cookies?
I’ve been making these every other week since I first made these Macadamia Nut Cookies with White Chocolate Chips. They’re so yummy, so soft, and very chewy. They’re really easy to make. I don’t have a mixer, so I mix them by hand and with a spatula. You can always use a mixer, but I’m not sure how long it takes to get the right consistency with the butter and sugar. You have to make sure it’s light and fluffy. Throughout all the batches I’ve made, I’ve noticed that if I don’t take my time mixing the butter and sugar, my cookies will still be delicious, but they’ll be a lot harder to work with. They’ll stick to your hand like sourdough starter. So you have to make sure it’s light and fluffy so you can work with it better and don’t waste dough from all the dough that sticks to your hands.
How to Prepare the Macadamia Nut Cookie Dough
Pre-heat oven to 350°F

In a bowl, strain 1 cup of sugar and 1/2 cup of brown sugar through a sieve to avoid clumps. Use a whisk to scrape off any remaining sugar, and if there are clumps, replace the discarded sugar with leftover, unclumped sugar. After successfully pouring the two sugars through the sieve, whisk them together to combine. I prefer straining the sugars through a sieve so I don’t have to deal with those pesky sugar clumps, resulting in a smoother dough.

Preheat your stove to medium heat and place the pan on it. Add two sticks of butter and let them melt, but not boil. Stir them well to avoid turning them into brown butter.

Once the butter is melted, you will add it to the sugar mixture and immediately get to mixing. It will be runny, but the goal is for it to stick all together and not be as sticky.

Your goal is to get it like the image above, you see how the area I am mixing is kind of sticking together? That’s the goal. You want to Mix until light & Fluffy. It will take about 10-12 minutes non stop (with a whisk)

You will then add 2 eggs and 2 teaspoons of vanilla extract. You are going to mix until just combined. Just enough, don’t over-mix after mixing all yolks in.

You want the mixture to look like how it does for step six not too mixed, but just mixed!

In a separate bowl, you will add 3 cups of flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. You will mix thoroughly. You will then add 1/2 of the mixture into the other bowl where you are working on the dough. Mix. *I like to strain it through the sieve.

Add the rest of the mixture. Mix.

Mix it all up. I like to fold the dough in and make sure I get all the powder mixture into the dough.

I add 1 cup of macadamia nut cookies.

Add 1 1/2 cups of white chocolate chips.

Mix.

Roll the dough into little balls. Place them in a preheated oven at 350°F for 12 minutes for larger cookies. If you’re making the size of balls I did, bake for about 8-10 minutes. Let them cool on the baking pan for 15 minutes (don’t remove from the pan just yet).
